The deep fryer wrecked the indoor air quality

Since I love to cook, and I love greasy unhealthy fast food, my wife gave me a deep fryer for Christmas. It fits on a countertop, but works the same way as the huge fryers these use in restaurants. I also got a cookbook for recipes called “taste-alikes” which are home versions of all the best fast food recipes. I know how to make McDonald’s fries and deep fried burritos at home now! As much as I love it, there is one problem with this fryer. It causes a heck of a smell, and impacts the indoor air quality of the house in a major way. The ventilation system in my kitchen is very old, and I have come to learn that it works very poorly. I even got up on the roof to check the exhaust vent over the kitchen ceiling, and found a bird’s nest in it. After that my wife called the local HVAC company and asked for a ventilation expert to inspect our kitchen. She knew my willingness to try fixing things myself, and didn’t want me to damage the ventilation system or myself by trying to be helpful. An HVAC expert came over the next day, and recommended an entirely new range hood and exhaust vent. Since the ductwork over the kitchen had never been cleaned out it was utterly ruined. He explained that if we got a new ventilation system we could do a ductwork cleaning once a year and that it would work basically forever. With all this fried food, we may need to clean the ductwork twice a year.
